You said you used to have CH pedals. My complaint with the CH pedals is that the centre indent was quite hard. By that, I mean, it would take a bit of force to push them away from centre.

How would you compare the Thrustmaster pedals to the CH pedals in that regard?

It's less noticeable than the CH Pedals, I would go so far as to say that it isn't that noticeable but there is a slight click when you get to the centre. The movement of the pedals is better too.
